This is a very easy and super yummy breakfast. Not only is it bursting with flavor, but it has protein, fiber, and all the probiotics that kefir has to offer.
In our home we make this at least a couple times per week since we don’t want the kefir to expire. Once you have all the ingredients it’s easy to make it over and over again.
This is based on a Mexican snack that you find it in ice cream shops called “yogurt con frutas.” The yogurt in Mexico is more liquidy than it is in the States, which is why I use kefir (if I had used regular American yogurt it would have been too thick for my taste, but if that is all you have available then go for it!).
Notes about Ingredients:
-I prefer strawberry kefir, but if you want to cut sugar go for plain non-flavored.
-As far as fiber and protein goes, the original recipe calls for granola and wheat puffs. I use wheat puffs and add nuts and hemp seeds for extra protein. I use a tablespoon of each ingredient but I find it’s even tastier with extra wheat puffs.
When it comes to fruit, you can use all the fruits I use or just your favorites. I like to make it with all of them but if I don’t have papaya on hand I just use what I have.
Ingredients (makes 4 servings):
- 2 cups kefir ( ½ cup per serving)
- 5 to 8 strawberries
- 1 banana
- ½ apple
- 1 cup of papaya
- 1 cup of wheat puffs
- ½ cup of nuts
- 4 teaspoons of hemp seeds (1 teaspoon for each cup)
- 4 teaspoons granola (optional)
Pour ½ a cup of kefir into each glass. Chop fruits into bite-sized pieces and add them to the glass. Top with wheat puffs, nuts, and hemp seeds. Finish with a drizzle of honey.
