I came up with this recipe one day when I had no idea what to make for lunch. I had some avocados and I when I checked my pantry I found some cans of tuna cans there you have it: stuffed avocados! There are many different ways to stuff them, but this recipe is particularly fast and super easy. It shouldn’t take more than 5 minutes to make it and most likely you already have the ingredients in your pantry!
The proportions will vary depending on how many people you have. I would say one avocado per person is a good amount and one can of tuna should be enough for two avocados
With such a simple ingredients you can create a tasty dish that is super healthy as well! It is a good balance of omega-3s and omega-6s and is super easy to make for lunch or for a weeknight dinner on a hot summer day.
You will need
A red bell pepper
Mayonnaise (about one tablespoon per can of tuna)
A teaspoon of capers
You can adjust depending on your preferences, of course. I love capers so I put a lot of them!
Chop the red bell pepper in small pieces and add the mayo, capers, and drained tuna.
Mix it all together, spoon into your avocados, and enjoy!
